EAGLE, ID – In recognition of American Diabetes Month, the Idaho Potato Commission (IPC) has partnered with the American Diabetes Association (ADA) to challenge long-standing misconceptions about potatoes and their role in a balanced diet.
As part of the ADA’s Better Choices for Life program, Idaho® potatoes have earned a spot on the list of products meeting the association’s nutritional guidelines. This collaboration is at the center of a new campaign titled Mashing the Myth, which aims to correct beliefs that potatoes spike blood sugar, contribute to weight gain, or lack essential nutrients.
“Potatoes provide complex carbohydrates, potassium, vitamin C, and fiber,” said Sheila Varshney, RDN, Associate Director of Nutrition and Wellness at the ADA. “When prepared thoughtfully and eaten in balanced portions, they can be part of a healthy eating plan—even for people with, or at risk for, diabetes.”
The campaign includes practical tips for diabetes-friendly preparation, such as air frying or roasting, and encourages pairing potatoes with lean proteins and non-starchy vegetables. To demonstrate these strategies, the ADA is offering a free virtual cooking class, Holiday Potato Side Dishes, Three Ways, today at 4:00 p.m. PST, hosted by Chef Joel and registered dietitian Toby Smithson.
